Much more fleshing out of the game world. There's almost twice as much dialogue in Avernum! Many new characters, quests, special encounters, and other neat stuff. There's a web page on Exile versus Avernum with some details: Original, you mean Exile? As far I know each remake adds new stuff in matter of contents related to story/quests/npc and even dungeons. In that it's got similarities that I dislike to D&D. I do kind of agree on the way the game system works, since the enemies that are of higher level than you get some pretty remarkable bonuses to their stats (damage and damage reduction) against you. You could also lower the difficulty setting: especially Torment requires some optimization and it's really ruthless - there you can mostly fight enemies of your own level or lower. Most towns are always safe to visit, though their vicinity might not be (wandering monsters). If you do venture elsewhere, avoid combat before you get stronger. In the beginning you should stay near the Center Avernum area before heading elsewhere, killing goblins, bats and lizards in the dungeons and fortresses, and soonish also the Nephilim (but avoid Nepharim until you're stronger). Basically, if you get wiped or keep dying against certain foes, go elsewhere and find something that you can kill, level up, and return to try again at a higher level.
